Healing Soup Recipe (Show 1255)
Here's a delicious yet simple homemade soup that's ready in 25 minutes and tastes really good when you're sick. Jack ate several bowls of it the day he stayed home from school, and he felt better in no time! Ingredients: * 1 1/2 Tbs. olive oil * 6 minced cloves of (fresh) garlic * 1 Tbs. paprika * 2 28-oz. cans of tomatoes * 1 1/4 cups water * vegetable bouillion cube (optional; try a low sodium kind) * 1/4 cup chopped fresh parsley. To make the soup, first puree the 2 cans of tomatoes in a blender or food processor. Then heat the olive oil in a pot, and saute the garlic for one minute over moderately low heat. Add the paprika; stir and saute for half a minute. Then stir in the pureed tomatoes and the water. Bring to a boil, and stir in (to completely dissolve) the vegetable bouillion cube, if you're using it. Cover the pot, and simmer gently for 15 minutes. Serve in soup bowls, garnished with the chopped parsley. And feel better soon! |
