Apple Rice Pudding (Show 1304)

Mr. Burnham let us pick tons of apples at his orchard. When we got back to our clubhouse we didn't know what to do with all of them! Then we got an idea.....We made apple rice pudding! You can make it, too.
 
Ingredients:
 
     * 1/4 cup maple syrup
 
     * 2 Tbs. butter or margarine
 
     * 1 tsp. cornstarch
 
     * 1/2 tsp. cinnamon
 
     * a pinch of nutmeg
 
     * 2 cups of chopped apples (peeled if they're not organic)
 
     * 2 cups cooked rice or quinoa (a slightly crunchy, nutritious grain you can find in a health food store or aisle)
 
     * 2 cups milk (you can use soy milk or rice drink if you prefer)
 
     * 2/3 cup raisins
 
     * 1 tsp. vanilla
 
     * 1/4 cup wheat germ
 
In a small pot, melt the maple syrup and the butter or margarine. Stir in the cornstarch, cinnamon, nutmeg, and chopped apples. Heat this mixture until it begins to bubble. Then add the cooked rice or quinoa, milk, and raisins. Heat until mixture begins to bubble but isn't yet fully boiling. Then turn the heat down, and simmer until the apple pudding thickens (approximately 15 minutes), stirring occasionally. Remove from burner, and stir in the vanilla and wheat germ. This is a yummy treat that you can eat for breakfast or dessert.
